KT and Mark's Omelet Recipe
Having lots of fresh eggs around we tend to make a lot of omelets. In fact, they're pretty much our favorite breakfast food. We don't follow a recipe per se, more of an approach.
Basic Ingredients
This is just one version, but a popular one.- 2 or 3 fresh eggs
- 1/4 onion
- 1 clove garlic
- 3/4 cup chopped green and red bell peppers
- 1 Tablespoon capers
- 1 Tablespoon green chile
- salsa
Approach
- Whip the eggs together.
- Chop up the onion and bell peppers.
- Throw the onion, bell pepper, green chile, and capers in a skillet with a little oil. Press the clove of garlic in as well and cook till ready, then set to the side.
- Re-oil the skillet (or oil up another one) and heat it up. We use a cast iron skillet with a low lip, making flipping easier.
- Pour the eggs on the hot skillet and move it around to achieve even coverage. A handle is very useful here.
- When the eggs are ready, toss the other ingredients onto one side of the omelet and fold it in half with a spatula. Let it cook for a bit, and if necessary, flip it and let it cook some more.
- Take it off and let it rest. Throw the salsa on top and serve.
Vartiations
The options are endless but here's a couple things to try:- Instead of salsa try fresh avocado, a fruit chutney or a curry sauce.
- Different kinds of cheese can make for a completely different experience. If your other ingredients are pretty robust try some stronger flavored cheese such as an extra sharp cheddar or feta. If you're afraid those cheese will overpower your other ingredients try a milder cheese such as swiss, mozzarella, or gouda.
- During the summer our garden tends to explode tomatoes and they find their way into the omelet any way they can. They're good chopped and thrown on top, they're good dried and cooked inside, and they're also good cooked in the skillet and thrown in the middle.
- If we have spinach from the garden we'll often sear a bit and throw that in as well.
- If asparagus is your thing steamed asparagus is great in omelets and is a good use of leftovers.
- Whatever you have, chances are it'll taste pretty good in an omelet.
