Mom's Deviled Eggs

Deviled eggs are truly a wonder food full of tasty goodness! I absolutely adore them. When I was a child it was always my job to make them for holiday dinners. My Mom taught me how to make them, and over the years I have come up with some great modifications.

1)Hard boil as many eggs as you wish- you can make as little or as many deviled eggs as your heart desires. Peel them, and cut each egg in half the long way.

2)Pop out the yolks into a bowl, and mash them with a fork.

3)Add mayonnaise and mustard to yolks and mash together. Add enough mayo and mustard to suit your preferred taste and consistency. (I rarely measure anything when cooking- I taste and eyeball it).

4)With a spoon, put the yolk mixture back into the egg white.

5) Almost done- just sprinkle some paprika on top your eggs.

My Modifications
Add lots of fresh crushed garlic, or whatever herbs and spices you prefer. Buy some fancy mustards to use or spice up your eggs with some green chile. Add some diced sauteed onions or capers. Sprinkle bacon pieces on top. What ever you can think up- give it a whirl.
